Bikini Recipe
Yields 10 servings
Ingredients for the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Drink (produces 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Citrus Syrup: Put every items into a pan, heat until it reaches a simmer, mixing to dissolve. Next, take off the heat and leave to reach room temperature entirely. Transfer to a sterilised bottle, close it and refrigerate it in the fridge, where it will keep for around four weeks.
To make Cocktail Base: Mix all the spirits and syrup into a large bottle, allow it to infuse for an hour, then strain best through a fine cloth, so it's perfectly clear.
To serve: Pour 85ml from the batch mix to a stirring glass filled with ice, and agitate lightly for about 60 seconds until cold. Pour to a cold coupe glass or equivalent, decorate with the cranberries and complete it by giving it a light spray of mandarin oil above the glass.
